Today we are celebrating summer family gatherings, picnics at the lake, backyard barbeques and also a special YRMC anniversary! Ten years ago, the YRMC East campus in Prescott Valley opened up its doors to the community. And since then, it’s grown into a state of the art hospital!
I had the great pleasure of welcoming Frank Almendarez, YRMC’s East Campus administrator into our kitchen to help me prepare a Grilled Potato Salad; definitely a crowd-pleasing dish that you can bring to any of your summer gatherings. It can be easily made, but it’s just different enough to make it quite special.
This salad has some grilled veggies, like red peppers, red onions and of course grilled potatoes and the dressing is a lime and chipotle based vinaigrette that gives it a bit of a warm heat and a nice southwestern flare.
