When we think of pumpkins we immediately picture a jack-o-lantern on Halloween or a pumpkin pie during Thanksgiving dinner. There are various types of pumpkins and countless pumpkin recipes. If we are going to cook with pumpkins we are best off using the pie pumpkin variety; which tends to be sweeter, a little bit darker and less stringy than the ones we use for decorative purposes.
Pumpkins are so versatile, they can be sweet or savory. They can be used in place of any winter squash or even potatoes in some recipes. The seeds can be saved for roasting with either oil or butter and some spices for added nutritional value and flavor.
Pumpkin seeds are so nutritious; they are super high in fiber, zinc which helps boost our immune system, magnesium, omega 3 fatty acids that help lower cholesterol.
