Rita Carey Rubin, host of YRMC’s Your Healthy Kitchen, Registered Dietician and Diabetes Educator, uses mild leaf and butter lettuce and Romaine, as well as bolder greens like arugula and radicchio, all from Whipstone Farm in Paulden, Arizona. She tosses in fresh herbs, potatoes, onion, olive, parsley, blueberries, walnuts and more. Topped with easy, homemade vinaigrettes, these salads are delicious, nutritious powerhouses.
“I think I eat some sort of salad every day,” Rita says. “That might sound boring, but when you vary the types of greens, herbs, vegetables and fruits you use, and choose the ingredients that are fresh and in season, a salad can be the best part of any meal.”
