I was so pleased to welcome and cook with a very special guest; Elena Greenberg, a creative and passionate FoodCorps service member who works with our local schools and community to connect kids with healthy food.
When you go to www.foodcorps.org, the first thing you see is a banner that reads: ‘Every school a healthy school. Every child well nourished, eating healthy, and ready to learn.’ That is really exciting stuff!
FoodCorps connects kids to healthy food in school, so they can lead healthier lives and reach their full potential. They focus on hands-on lessons where they teach cooking, gardening and let the kids taste the food they have grown and prepared themselves. FoodCorps also promotes healthy school meals by creating a cafeteria that steers students towards the healthiest options and gets kids excited to try new healthy foods. Lastly they seek to achieve a school-wide culture of health where they encompass the entire school community from teachers, to the hallways, to even the bake sales.
I had a great time cooking this delicious, healthy and easy recipe with Elena, while we talked in more detail about FoodCorps and the amazing work they are doing that I know will have a positive impact on the lives of many children and families in our community.
