What to Do with All Those Greens!

Recently, I bought a crate of gorgeous spring greens, grown locally at Whipstone Farm in Paulden and brought them to the set of The Morning Scramble with  for my monthly live segment.

We piled bok choy, tatsoi, spinach, baby kale, baby arugula, turnip greens, and radish greens on the kitchen counter and reveled in the lovely greenness of it all! Check out the show:

I made a simple sauté with the bok choy during the live segment, and brought the rest of all those greens back home. Needless to say, greens showed up in every meal that week! Here are a few of the dishes we enjoyed at home:
